Lola Rose Grand Mezze executive chef dishes on new restaurant, growing up in the desert

Executive chef Quentin Garcia of La Quinta has already cooked in some of the world's most prominent kitchens, learned under the guidance of master chefs and opened a farm-to-table fine dining restaurant — and he's only 30. But applying all that he's learned and expanding the desert's culinary offerings might just be his most special venture yet.

Lola Rose Grand Mezze, located in the new Thompson Palm Springs hotel in the city's downtown, showcases Levantine-inspired cuisine with a Californian twist. Since it opened in late 2024, Garcia has already seen repeat customers, consisting of both locals and snowbirds hankering for a taste of something new.

The restaurant is already becoming a go-to place for celebrations, special nights out on the town or just people looking to try some Mediterranean and Middle Eastern-inspired bites — anywhere between 200 and 600 people dine there each night, Garcia said.
